Cosmos Galaxy restaurant opens at JD’S Truck Stop

A new restaurant inside JD’s Truck Stop in Niles promises to offer food that is “out of this world.”

Cosmos Galaxy Pancake House offers a wide variety of breakfast food served all day in addition to a full menu featuring traditional American food.

Owner Toula Katsaliros, of Mishawaka, Indiana, said they’ve received a lot of referrals since opening June 1 at the site of the former Diesel Diner, which closed last year.

“We’ve had a very good response so far,” said Katsaliros, who said she has operated several other restaurants in the past.

She is running the business with the help of her “right-hand man” and brother, Stan, who also has extensive experience in the food industry.

“We hope everyone comes and tries our pancakes and other great food,” Stan said.

The restaurant is open from 5 a.m. to 9 p.m. Monday through Saturday and from 6 a.m. to 2 p.m. Sunday. It is located at the corner of U.S.-12 and Mayflower Road in Niles near the 31-Bypass.

Toula said her brother, Stan, makes everything from scratch.

“We don’t open cans to make soup and other stuff,” she said.

The menu features everything a person would expect from a traditional breakfast restaurant, including pancakes, skillets and much more.

They even offer a “Galaxy Challenge” where people can attempt to eat eight pancakes in a limited amount of time in order to get the meal for free.

“No one has tried it yet,” Toula said.

They even have some unique offerings like the Peanut Butter Lover’s French Toast, which features peanut butter cups and whipped cream topping.

“People have liked that — but you have to love peanut butter,” Toula said.

The restaurant also offers a fish fry each Friday beginning at 11 a.m. and extending through the rest of the day.

Toula said, although the date hasn’t been set, they plan to hold a grand opening with free pancakes in the near future.

“Keep looking for it,” she said.
