If you happen to be a biscuit lover, and don’t wish to take the time to make them from “scratch,” then we have just the thing for you.

Breakfast Biscuits

(2) 12 oz. tubes refrigerated buttermilk biscuits
1/4 c. grated Parmesan
cheese
1/4 cup either butter
or oleo
1 1/4 tsp. dill weed
1/4 tsp. garlic powder

Begin by separating each of these tubes of biscuits into ten complete biscuits, then cut each biscuit in half. Set aside. Using a small bowl, combine the remainder of ingredients and proceed to drizzle just half of this amount into a greased 10-inch fluted tube pan. Place just half of these biscuits into the pan; drizzle them equally with the remaining butter mixture, then top with the remaining biscuits. Slide immediately into a preheated 350-degree oven for just thirty to thirty-five minutes, until biscuits take on a golden brown hue. Allow the baked biscuits to cool for a good five minutes before you attempt to remove them from the pan, but do make certain they are nice and warm when you serve them.

Tasty Pot Roast

One approx. 4 lb. beef roast
1 good-sized onion
1 1/2 c. orange juice
1 c. tomatoes
1 tsp. leaf thyme, crumbled
1/2 tsp. ground nutmeg
3 tbsp. cornstarch
6 slices bacon, diced
2 tbps. lemon juice
Garlic clove, minced
1 tbsp. granulated sugar
3 tsp. salt
1 entire bay leaf
Approx. 1/4 c. water
Dash pepper

Brush the entire surface of roast with lemon juice, then allow it to set for six to eight minutes. Saute the bacon together with the onions and garlic until bacon becomes crispy, then remove and set aside. Use same pan with the bacon drippings to saute beef roast over a medium-high heat. Stir in diced bacon, orange juice, tomato and all the seasonings. Place lid on pan and allow mixture to simmer gently for several hours until meat tests tender. Once you reach this point, remove meat to a pre-heated platter and keep hot while you make gravy. Pour liquid into a four-cup measure and allow it to stand for a minute or until the fat rises to top. Carefully skim off fat, remove the bay leaf and add just enough water to make three cups of liquid. Return to the pan and heat to boiling. While waiting to reach the boiling point, blend cornstarch with the quarter-cup water and slowly add it to the hot liquid.

Continue cooking and stirring constantly until the gravy thickens and allow it to boil gently for a few minutes. Carve piping hot meat into thin slices and serve it with the gravy.

Sweet Red Pepper Sauce

1 c. canned tomatoes, diced
and drained
1 1/2 tsp. olive oil
1/2 c. fresh pears, peeled
and chopped
1/3 c. tomato puree
4 red bell peppers, seeded
and chopped
2/3 c. thinly sliced carrots
1/2 tsp. minced diced basil
1/8 tsp. ground black pepper
1 tsp. minced garlic

Place the olive oil into a large skillet. Use this to saute your peppers and carrots until they become softened. Once this is accomplished, add the tomatoes, pears, puree, garlic, pepper and basil. Simmer mixture for a 30 minutes, or until the vegetables soften. Place all of this into your blender and puree until mixture is nice and smooth, then make certain mixture is hot before you serve it over the pasta.
